Borscht is a soup traditionally made from beets and white cabbage and is especially popular in Eastern and East-Central Europe. The origin of the words “borscht” or “barsch” most likely lies in the Slavic name for hogweed: in the Middle Ages, its non-poisonous sprouts and young leaves were an integral part of soup.
